In a food processor or using a stick blender, blend raspberries until smooth.
4 c. Raspberries
Over low heat, mix water and sugar and gently stir until the sugar has dissolved.
1 1/4 c. Water, 1 1/4 c. Sugar
Once the sugar has dissolved, add in the orange peels.
Raise heat to medium-high until it boils gently and then reduce heat to a simmer.Simmer for 2 minutes.
Remove from heat and stir in raspberry puree.
Allow the cordial to cool completely and strain through a sieve/jelly bag to remove seeds.
Notes
Store in a bottle, small jug, or mason jar for up to 4 days in the refrigerator. You can also freeze it in ice cube trays. It will stay good for about 2 months frozen.
